Arroz à la Stephen & Naomi

We came across this yummy dish on our Portugal trip in 2020. It‘s a great use of leftover rice and it‘s a hearty winter dish to warm you up 🔥

Ingredients

Ingredients serve 2 persons

1 onion

3 garlic cloves

chilies

2 tbsp olive oil

leftover rice

1 canned beans

1 can pelati

1 handful coriander

salt

pepper

1 tsp vinegar

1 tsp soy sauce

1/2 tsp sugar

lime juice

Instructions

cut onion, garlic and chilies

heat olive oil in pan and add onion, garlic and chilies and fry for 3 min

add rice and fry for 5 min

add beans (do not drain them and add the liquid as well), pelati and 1dl water

season with salt, pepper, sugar, soy sauce and vinegar and cook for 10 min

add chopped coriander and serve with lime juice
