200g pumpkin
3 garlic cloves
1 chili
Handful parsley
Salt and pepper
340g pasta (or as much as 2 people can eat)
Parmesan to serve
Roasted pumpkin seeds to servce
100ml olive oil

Bake pumpkin in oven until itβs tender
Cook garlic cloves in water for 5min
Mix baked pumpkin, olive oil, parsley stems, chili and garlic with a blender and mix well (add water if the mix is too thick to blend), season with pepper
(If the pasta water is salty enough you donβt need to season the pumpkin mix with extra salt)
Cook pasta in salt water until they are al denta
Bring together pasta, pasta water and pumpkin mix in a pan (it should me a creamy mix)
Add chopped parsley leaves
Serve with parmesan and roasted pumpkin seeds
