200g pure butter shortbread highlanders (Walkers from Migros) or any other cookies
pinch of salt
100g melted butter
800g Philadelphia cream cheese
200g crème fraîche
130g sugar
1 pack vanilla sugar
1 vanilla pod
2 tbsp flour
4 eggs
1 tbsp lemon juice
1 tsp lemon zest

Crush cookies into very small pieces
Preheat oven to 175 degrees celsius
Butter a cake pan
Mix cookies with a pinch of salt and melted butter
Put the mix into the cake pan and press into the pan using something flat like a jar
Bake for 15min, then take it out and let it cool off a bit
While waiting prepare the filling
Whisk the cream cheese for 2-3min until it‘s creamy
Add sugar, vanilla sugar, vanilla pulp from the vanilla pod, lemon juice, lemon zest and crème fraîche and mix well
Beat the eggs separately in another bowl
Carefully mix the eggs with the other ingredients
Add filling to the cake pan
Bake for 45min and add an oven-safe pan filled with water into the oven (so the cake doesn‘t dry out and/or get too much colour)
When you take out the cake the middle still needs to be jiggely
Add flour and mix well
