Green leaves dish 🍃 against food waste

You can use any sort of green leaves for this recipe from spinach to beetroot leaves to radish leaves, whatever is flying around in your fridge and usually ends up in your compost

Ingredients

Ingredients serve 2 persons

1 handful green leaves

1tsp lemon or lime juice or vinegar (whatever you have at home)

Or use 2tsp Ponzu instead of soy sauce & lemon/lime juice

1tsp soy sauce

Instructions

Boil 1l of water

Wash green leaves and blanch in boiling water

Drain green leaves and chill in cold water until the leaves are cooled down (abschrecken)

Drain leaves properly (squeeze with your hands)

Form a long sausage with you green leaves (squeezing) and then cut in 5cm pieces

Put on a small plate and season with soy sauce and lemon or lime juice or vinegar (or use Ponzu instead)
